Strawberry Banana Blender Muffins

Today’s recipe is from Pinterest user @happyhealthymama.com. Easy, fast, tasty. Easy to make with few ingredients and quick to bake in just 15-20 minutes. These muffins are gluten free, nut free, sugar free, wheat free and vegan. Not too sweet, bananas and strawberries add natural flavor. This healthy recipe is a keeper! Great for breakfast to go! Great lunch box treat!

Yields: 9 muffins

  • 1 cup mashed banana (about 2 medium bananas)
  • 1 cup strawberry chunks (4-8 strawberries)
  • 1 1/2 cup old-fashioned oats
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  1. Preheat the oven to 400 degrees. Line a muffin pan with silicone baking cups or grease the pan.
  2. Place all of the ingredients in a blender and blend until very smooth, scraping down the sides of the blender if necessary.
  3. Transfer the batter from the blender into the muffin cups. Each cup should be filled about 2/3 to 3/4 of the way to the top. Put the muffin pan in the oven and reduce the temperature to 350 degrees. Bake until a toothpick comes out clean, 15-20 minutes. Mine were perfect after 17 minutes. Allow to cool completely before removing from the pan. Enjoy!
