Blackberry Cream Cheese Muffins

The inspiration for today’s recipe is from Pinterest @baking.bites. Easy, fast, tasty. Easy to make with few ingredients and quick to bake in just 20 minutes. These muffins are very moist and sweet. With the cream cheese baked in, they are perfectly balanced by the tart blackberries. Melt in your mouth creamy sweetness. Great breakfast to go! Great lunch box treat! Great anytime treat!   1. Preheat oven to 375F. Line a muffin pan with 12 paper liners.
  2. In a medium bowl, whisk together flour, baking powder and salt.
  3. In a large bowl, beat together butter and cream cheese, then cream sugar into the mixture until light and fluffy. Beat in the egg and vanilla extract. Add half of the flour mixture, followed by the milk, then stir in the remaining flour mixture until no streaks of dry ingredients remain and everything is just combined. Fold in blackberries carefully with a spatula.The batter will be thick.
  4. Divide batter evenly into muffin cups, piling it above the top of the pan (this will make for more dramatic muffin tops).
  5. Bake for 17-20 minutes, until a toothpick inserted into the center of a muffin comes out clean and the top springs back when lightly pressed.
  6. Turn muffins out onto a wire rack to cool before serving. Store in an airtight container.
