Blackberry Frozen No Bake Pie

The inspiration for today’s recipe is from Pinterest @goboldwithbutter. Easy, fast, and tasty. Easy to make with only 6 ingredients plus 1 (9-inch) graham cracker crust and quick to bake. No baking involved! Just freeze 3 hours. When the weather app says”feels like 100*F” this is what you make. Cool creamy melt in your mouth blackberry goodness! This recipe is a keeper! Perfect party pleaser!

Yields: 8 servings



  1. In small bowl, mash blackberries slightly with fork. Set aside.
  2. In large bowl, whip heavy whipping cream with electric mixer until soft peaks form. Set aside.
  3. Combine cream cheese, sugar, lemon zest, blackberries and vanilla and mix until smooth. Fold in whipped cream. Pour mixture on top of crust.
  4. Freeze for 3 hours or overnight. Allow to thaw 10-15 minutes before cutting with sharp knife and serving. Top with fresh blackberries if desired.
