Healthy Apple-Walnut Muffins

Today’s recipe is from Great American Home Baking Card #6. Easy, healthy, moist. Easy muffins to make with 15 minutes prep time and quick to bake in just 25 minutes. Healthy with no added fat or sugar. Apples, apple juice, and buttermilk make these muffins moist. This healthy recipe is a keeper! Great for breakfast on the go!

  1. Preheat oven to 375 degrees F. Grease 12 standard size muffin- pan cups or line with paper liners.
  2. Mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg, and salt; set aside.
  3. Mix together eggs, apple juice, and buttermilk. Stir flour mixture and oat bran into egg mixture until dry ingredients are just moistened. Do not overmix.
  4. Gently stir in chopped apples and nuts. Spoon batter into prepared pan, filling cups two-thirds full. Garnish each muffin with an apple slice.
  5. Bake muffins until lightly golden and tops spring back when pressed, 25 minutes. Transfer pan to a wire rack to cool slightly. Turn muffins out onto rack to cool completely.
