Flourless Almond Butter Pumpkin Muffins

Today’s recipe is from Pinterest. Easy, fast, healthy. Easy to make with few ingredients all mixed in one bowl and quick to bake in just 16 minutes. Healthy with no butter, no flour, and no sugar makes this gluten free recipe a keeper! These muffins are extremely moist and incredibly tasty. Food purists, this one is for you! You have to try it to believe it. Great for breakfast on the go! And lunch box treat!

Yields: 8-10

  • 2/3 cup almond butter
  • 1/3 cup pumpkin puree
  • 2 eggs
  • 3 Tablespoons honey
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon vanilla
  1. Preheat oven to 350. Line a cupcake pan with cupcake liners and set aside.
  2. In a large bowl, heat almond butter for about 15 seconds so that it mixes more easily. Using a whisk or an electric beater, beat pumpkin puree, eggs, and honey into the almond butter.
  3. Stir in cinnamon, pumpkin pie spice, baking soda, and vanilla.
  4. Divide batter among prepared pan (I got 8 muffins, you can get 10-12 though) and bake for 16-18 minutes or until toothpick inserted comes out clean.
  5. Enjoy!

    these sound good but I really detest honey. Could you substitute with something like white or brown sugar? Or maybe something like maple syrup, corn syrup, or even molasses?
