One-Pot Mocha Brownies
Today’s recipe is from Organic Style magazine. Easy, healthy, quick. Easy brownies to make with 5 minutes prep time and quick to bake in just 25 minutes. Healthy with small amount of butter and sugar (compared to other brownie recipes). Decadent chocolate flavor with a hint of coffee makes this brownie recipe a keeper! Perfect party pleaser!!
Yields: 9 brownies
- 4 ounces unsweetened chocolate
- 5 Tbsp unsalted butter
- 1 cup granulated sugar
- 2 tsp instant espresso powder
- 2 large eggs, beaten
- 1/4 cup whole milk
- 2 tsp dark rum or vanilla extract
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- Preheat the oven to 350 degrees. Butter and flour an 8-inch-square baking pan.
- Place chocolate and butter in a medium, heavy-bottom saucepan over very low heat and stir with a wooden spoon until melted. Remove from heat and whisk in sugar and espresso powder. When mixture is nearly room temperature, whisk in eggs until blended. Stir in milk and rum. In a separate bowl, stir together flour, baking powder, and salt. Add to saucepan and whisk until just incorporated.
- Scrape batter into prepared pan with a spatula and smooth to edges. Bake 25 to 30 minutes, until a toothpick inserted in center comes out clean. Cool completely in pan on a rack. Cut into nine squares. Wrap individually in waxed paper or place in a tightly sealed container.
