Peach Greek Yogurt Muffins
The inspiration for today’s recipe is from Pinterest. Easy, fast, and moist. Easy to make with few ingredients and quick to bake in just 25 minutes. Greek yogurt makes these muffins very moist. Melt in your mouth summer sweet peach goodness! Great breakfast to go! Great lunch box treat! This recipe is a keeper!!
Yields: 12 muffins
- 2 cups flour
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 eggs
- 1 (5.3 oz. cup) plain greek yogurt
- 1/4 cup coconut oil, melted
- 1/4 cup milk
- 1 1/2 cup peaches, chopped
- Preheat oven to 350F degrees. Grease a large muffin pan or fill with paper liners.
- Mix together flour, sugar, salt, baking powder, baking soda, cinnamon, and nutmeg in a medium bowl.
- Mix together eggs, greek yogurt, and coconut oil in a large bowl.
- Add dry ingredients to wet ingredients alternately with milk beginning and ending with dry ingredients.
- Fold in peaches. Do not over-mix.
- Using a 1/4 measure cup, scoop batter into prepared muffin pan.
- Bake for 25 minutes. Cool in pan for 5 minutes.
- Preparation time: 10 minutes
- Cook time: 25 minutes
- Total time: 35 minutes
