Vanilla Wafer Cake
Today’s recipe is from Southern Living magazine. Easy, moist, sweet. Easy to make with only 8 ingredients mixed in one bowl. Baked at a low 300 degrees and slow for 1 hour gives a custard texture without the usual water bath. This moist sheet cake is full of sweet flavor. Sweet coconut, sweet pecans, sweet vanilla wafers. Melt in your mouth goodness! Great Summer supper dessert! Perfect party pleaser!
Yields: 12-15 servings
- 2 cups sugar
- 1 cup butter, softened
- 1 teaspoon vanilla extract
- 6 large eggs
- 1 (11-oz.) box vanilla wafers, finely crushed
- 1/2 cup milk
- 1 (7-oz.) package sweetened flaked coconut
- 1 cup pecans, chopped
- Preheat oven to 300°.
- Beat sugar, butter, and vanilla at medium speed with an electric mixer 1 minute or until creamy. Add eggs, 1 at a time, beating just until yellow disappears. Add crushed vanilla wafers to butter mixture alternately with milk, beginning and ending with vanilla wafers; beat at low speed just until blended after each addition.
- Fold coconut and pecans.
- Pour into a greased and floured 13- x 9-inch pan.
- Bake 55 to 60 minutes or until a wooden pick inserted in center comes out clean.

- Cook time: 55 minutes
- Total time: 1 hour 15 minutes
