These healthy cookies are flourless, sugar free, and wheat free. Flavored with almond butter and cocoa, sweetened with honey makes this healthy recipe a keeper! Great breakfast on the go! Great lunch box treat!
Yields: 18 cookies
1 cup natural peanut butter or almond butter (I do half and half)
¾ cup honey
½ cup coconut oil
2 teaspoons vanilla
3 cups quick oats
6 tablespoons cocoa powder
Combine peanut butter, honey, and coconut oil in a sauce pan and warm gently on stove top.
Add in the vanilla, oatmeal, and cocoa.
Remove from stove-top once all ingredients are in the pan and stir well.
Drop by the spoonful onto parchment paper and let cool.
Store in an airtight container in the refrigerator.
