Chocolate Cream & White Chocolate Chip Cookies

Yields: 18
- 2 1/2 cups flour
- 3/4 tsp salt
- 3/4 tsp baking soda
- 1 cup butter
- 3/4 cup brown sugar
- 1/4 cup sugar
- 1 tsp vanilla
- 2 eggs
- 4 ounces chocolate cream sandwich cookies (about 9) coarsely chopped (try Newman-O's)
- 4 ounces white chocolate, coarsely chopped (try Green & Black's Organic White Chocolate)
- Preheat oven to 350F. Line two cookie sheets with parchment paper.
- In a medium bowl, combine flour, salt, and baking soda; set aside.
- In a medium bowl or stand mixer, combine butter, brown sugar, sugar, and vanilla. Blend until smooth; add eggs.
- Begin adding flour mixture, scraping the bowl periodically. Once all flour has been added and dough has formed, stir in chocolate cookies and white chocolate.
- Roll dough into 1" balls and place on prepared cookie sheets, spacing 2" apart. Bake for 9-11 minutes, switching cookie sheets between oven racks halfway through. Transfer cookies to a cooling rack.
