No-Bake Carrot Balls

Today’s recipe is from Pinterest @hollyhomer. Easy, fast, healthy. Easy to make with few ingredients and quick to bake as no baking involved. These are healthy with no added sugar and sweetened naturally with carrots, figs, coconut, and honey. No-Bake Carrot Balls are fun to make for the whole family. This healthy recipe is a keeper!!

Yields: 2 dozen

  • 3-4 Shredded carrots (not cooked)
  • 3/4 cup of your favorite nuts (we used sunflower seeds, because of the allergies)
  • 7 dried figs (use your favorite fruit or anything you have on hand)
  • 1/4 cup honey
  • 1 cup unsweetened shredded coconut
  1. Put half cup of shredded coconut aside (we will use them for coating the balls)
  2. Put all ingredients into the food processor and let it do its magic for 2 minutes.
  3. The mixture should be thick enough to form the balls. That’s where you can ask kids to help. They will love it.
  4. Roll the carrot balls into the shredded coconuts that you reserved.
  5. Refrigerate overnight (or at least for few hours) before eating.
  • Preparation time: 10 minutes
  • Cook time: 0 minutes
  • Total time: 10 minutes
