Zucchini Banana Muffins
The inspiration for today’s recipe is from Pinterest. Easy, moist, and tasty. Easy to make with few ingredients and quick to bake in just 25 minutes. Applesauce and bananas make these muffins super moist. And give them a tasty flavor. Great breakfast to go! Great lunch box treat! This healthy recipe is definitely a keeper!!
- 1 cup A/P Flour
- 1/2 cup White Whole Wheat Flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon fine sea salt
- 1 egg
- 1/4 cup light olive oil
- 1/4 cup unsweetened organic applesauce
- 1 teaspoon pure vanilla extract
- 1/2 cup organic cane sugar
- 1 cup fresh zucchini, freshly grated (1 large)
- 3 over ripe bananas, peeled and mashed (HEAPING cupful)
- Preheat the oven to 350 degrees F.
- Sift the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a large bowl.
- Whisk the egg, oil, applesauce, vanilla and sugar in another bowl.
- Add the wet ingredients to the dry and stir until just combined.
- Grate the zucchini and mash the bananas.
- Add to the mixture and stir lightly to combine.
- Grease (or line) 6 Xtra large muffin tins and fill 3/4 full with batter.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Preparation time: 15 minutes
- Cook time: 25 minutes
- Total time: 40 minutes
