Zucchini Buttermilk Cream Cheese Muffins
The inspiration for today’s recipe is from Pinterest. Easy, fast, tasty. Easy to make with few ingredients and quick to bake in just 25 minutes. Moist and sweet these muffins are made with buttermilk and cream cheese. Melt in your mouth creamy sweetness! Great anytime treat! This recipe is a keeper!!
Yields: 12 muffins
- 1/2 cup sugar for cream cheese filling
- 1/4 cup vegetable oil
- 1/4 cup unsweetened applesauce
- 1 egg
- 1/3 cup buttermilk
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 cups all purpose flour
- 2 cups shredded zucchini
- 4 ounces cream cheese, softened
- Preheat oven to 350°F. Line muffin cups with liners or spray with cooking spray.
- Stir sugar, oil, and applesauce in a large bowl with a wooden spoon or spatula. Stir in egg, buttermilk, salt, baking soda, and cinnamon. Slowly stir in flour, then stir in zucchini.
- Place about 2 tablespoons of batter in the bottom of each of 12 muffin cups. Top with equal portions of cream cheese then place equal amount of muffin batter over the top.
- Bake for about 18-25 muffins until the muffins are golden brown. Cool before eating.

- Cook time: 25 minutes
- Total time: 35 minutes
