Banana Oat Greek Yogurt Muffins
Today’s recipe is adapted from Pinterest @runwithspoons. Easy, fast, tasty. Easy to make with few ingredients and quick to bake in just 20 minutes. Not too sweet, with very little sugar, bananas and chocolate chips add natural flavor. These healthy muffins are made with oat flour instead of wheat flour and without oil. This recipe is a keeper! Great for breakfast to go! Great lunch box treat!
Yields: 9-12 muffins
- 1 C. Organic plain Greek yogurt
- 1 C. Organic bananas, mashed
- 1 Organic egg
- 2 C. Organic oat flour
- 1/4 C. Organic sugar
- 1 Tsp. Aluminum free baking powder
- 1/2 Tsp. Organic baking soda
- 1/2 C. Organic chocolate chips
- Preheat oven to 375F . Line muffin pan with paper liners.
- Mix yogurt, bananas, and egg in large bowl. Mix oat flour, sugar, baking powder, and baking soda in medium bowl. Add dry ingredients to wet ingredients. Fold in chocolate chips.
- Pour batter into paper lined muffin pan.
- Bake for 15 minutes, turn pan and bake for 5 minutes.
- Preparation time: 5 minutes
- Cook time: 20 minutes
- Total time: 25 minutes
