Blueberry Greek Yogurt Muffins
The inspiration for today’s recipe is from Pinterest @madetobeamomma. Easy, fast, and moist. Easy to make with only 7 ingredients and quick to bake in just 20 minutes. Applesauce makes these muffins oil free and Greek yogurt makes them very moist. Melt in your mouth sweet blueberry goodness! Great breakfast to go! Great lunch box treat! This recipe is a keeper!
- 2 cups whole wheat flour
- 1 cup white sugar
- 2 tsp. baking powder
- 1/3 cup applesauce
- 1 egg
- 1 5.3 oz. plain yogurt container
- 2 cups fresh or frozen blueberries
- Preheat oven to 400 degrees.
- Mix together flour, sugar, salt and baking powder.
- In a separate bowl whisk together applesauce, eggs and greek yogurt. Slowly add the wet ingredients to dry ingredients.
- Mix just until combined.
- Fold in blueberries.
- Bake for 15-20 minutes or until center is done.
- Preparation time: 5 minutes
- Cook time: 20 minutes
- Total time: 25 minutes
