Blackberry Frozen No-Bake Pie
The inspiration for today’s recipe is from Pinterest @goboldwithbutter. Easy, fast, and tasty. Easy to make with only 6 ingredients plus 1 (9-inch) graham cracker crust and quick to bake. No baking involved! Just freeze 3 hours. When the weather app says”feels like 100*F” this is what you make. Cool creamy melt in your mouth blackberry goodness! This recipe is a keeper! Perfect party pleaser!
Yields: 8 servings
- 2 cups heavy whipping cream
- 8 ounces cream cheese, at room temperature
- 3/4 cup sugar
- 1 teaspoon lemon zest
- 1 1/2 cups fresh blackberries, plus extra for topping
- 1/2 teaspoon vanilla extract
- 1 (9-inch) prepared graham cracker crust
- In small bowl, mash blackberries slightly with fork. Set aside.
- In large bowl, whip heavy whipping cream with electric mixer until soft peaks form. Set aside.
- Combine cream cheese, sugar, lemon zest, blackberries and vanilla and mix until smooth. Fold in whipped cream. Pour mixture on top of crust.
- Freeze for 3 hours or overnight. Allow to thaw 10-15 minutes before cutting with sharp knife and serving. Top with fresh blackberries if desired.
